Cattiva fama e cattivo consumo
Frutta secca proprietà e benefici sconosciute ai molti, nonostante l’abitudine al consumo.
E’ consuetudine per molti italiani mangiare frutta secca, come arachidi, mandorle, noci, pinoli, pistacchi… al termine di un pasto importante introducendo un surplus di calorie nell’organismo.
La frutta secca è particolarmente apprezzata nel periodo invernale e viene consumata in abbondanza durante le festività, in concomitanza ad altre deroghe alle abitudini alimentari più feriali.
Altri italiani invece guardano con sospetto alla frutta secca, considerandola un alimento nemico della linea e da cui stare lontano, sia per le sue proprietà caloriche sia perché oltremodo costoso.

Frutta secca proprietà organolettiche
Quando si pensa alla frutta secca il primo gruppo che balza alla mente è quello della frutta con guscio, come arachidi, mandorle, noci, disponibile anche già sgusciata ed in alcuni casi salata.
In realtà questi sono solo alcuni dei prodotti che ricadono in questa categoria. La frutta secca infatti si ottiene anche tramite il processo di essiccazione, è il caso di alimenti come albicocche, ananas, mele, uva, banane, datteri, bacche di goji, prugne, fichi, mirtilli, mango.
Affiancare il primo gruppo di alimenti a quest’ultimo è sbagliato dal punto di vista nutrizionale poiché le loro proprietà sono assai differenti, nonostante siano accomunati dall’essere cibi ad alto contenuto energetico.
La frutta secca si può suddividere in due sottocategorie: glucidica e lipidica.
Frutta secca proprietà: lipidica
La frutta secca lipidica, detta anche oleosa, è ricca di grassi e povera di zuccheri. Questo gruppo comprende sia frutti in guscio che semi di alcune piante.
Fanno parte di questa categoria anacardi, arachidi, mandorle, nocciole, noci, noci del Brasile, noci di Macadamia. Fondamentale per la dieta dei vegetariani, la frutta secca lipidica a causa del suo apporto proteico.
E’ indicata per gli sportivi e per coloro che vogliono fare uno spuntino o una merenda sana magari accompagnandola ad una porzione di frutta fresca. Meglio quindi assumerla lontano dai pasti principali.
Di questo gruppo fanno parte anche alcune sementi nobili, come semi di sesamo, di zucca, di lino, papavero. Sono spesso usati nella panificazione sia per dare sapore aggiunto alle farine sia come sfiziosa guarnizione.
Frutta secca proprietà: glucidica
La frutta secca glucidica è ricca di zuccheri e povera di grassi. Viene ottenuta dalla disidratazione della frutta fresca o questa viene candita.
Fanno parte di questa categoria albicocche, amarene, ananas, bacche di goji, banana, datteri, fichi, fragole, gelso, lamponi, mando mela mirtilli, prugne, uvetta, zenzero.
Frutta secca proprietà nutrizionali
La frutta secca contiene grassi di tipo insaturo, ovvero quel sottogruppo di grassi che si è dimostrato protettivo per il rischio cardiovascolare. Le noci sono ricche di acidi grassi vegetali omega-3 ed è stata dimostrata la loro utilità nell’abbassare i livelli di colesterolo LDL, ovvero il cosiddetto “colesterolo cattivo”.
Inserire nella dieta 3 noci al giorno avrebbe un affetto paragonabile a quello delle statine. Le noci inoltre hanno un effetto benefico sui vasi e proteggono dall’ipertensione anche perché contengono antiossidanti e L-arginina.
Anche altri frutti sono stati oggetto di studio: è emerso come mandorle, fibre solubili, proteine della soia e steroli vegetali in genere siano in grado di ridurre i livelli di colesterolo totale quando consumate in modiche quantità ma con regolarità.
Noccioline, semi di lino, semi di sesamo sono ricchi di flavonoidi e antiossidanti. Questi sono composti che proteggono l’organismo dai temuti “radicali liberi”, molecole che danneggiano le cellule del nostro corpo favorendo i processi di invecchiamento, le patologie cardiovascolari, lo sviluppo del cancro.
Quanta frutta secca mangiare?
Attualmente la FDA (US Food and Drug Adminsitration), il principale organismo di controllo e orientamento sull’alimentazione degli Stati Uniti, preso a riferimento dalla maggior parte delle altre agenzie alimentari nazionali, consiglia tra le norme per prevenire il rischio cardiovascolare di assumere noci, legumi, sementi almeno 4 volte a settimana.
Prima di tutto vale la pena di citare le tipologie di frutta secca che si sono rivelate particolarmente efficaci nel ridurre il rischio cardiovascolare.
Oltre alle noci su cui ci siamo già soffermati, aggiungiamo nocciole, arachidi, pinoli, pistacchi, mandorle.
Inoltre non va dimenticato che tra gli oligoelementi che rientrano nelle RDA (recommended deitary allowance) la frutta secca in genere è un concentrato di proteine, fibre, calcio, ferro e sali minerali.
Frutta secca per diete salutari e sportive
